
The West Winds Sur Lie Gin
Aged 12 months on Chardonnay lees in a barrel sourced from Fishbone Wines, this gin has a creamy mouth feel with subtle native Australian wattleseed and Oak touches.
The West Winds Sur Lie Gin is a pairing of two Margaret River based producers, Fish Bone Wines and the home of The West Winds Distillery. Starting with a strong citrus based distillate, the base gin was then aged in Chardonnay Barrels sourced from iconic wine producer from Margaret River, Fish Bone Wines.
Having discovered a love for the taste of Chardonnay Lees in a previous life as a wine maker, Anthony Reynolds, now The West Winds Head Distiller had the idea to merge both brands to create something new and exciting for summer 2020. His idea was to age a gin not only in Chardonnay barrels but to also incorporate the use of Chardonnay Lees into the mix. This process creates an exceptionally smooth and rounded gin, with extra texture and palate weight similar to that of a Chardonnay wine.
Only a limited number of bottles has been produced.
The name ‘Sur Lie’ translates literally to ‘Aged on Lees’, a term used in French wine making.
THE PROCESS
The Gin distillate is aged for a period of 12 months with the lees included in the barrel, which are gentled stirred on occasion to develop the unique flavour and complexity. Older oak has been selected to impart a softer flavour, which ensures the gin is enhanced by the oak notes although never dominates the flavour profile.

BOTANICALS
The resulting gin has beautiful floral notes with hints or coriander, lemon and cinnamon myrtle. Producing an underlying vanilla character which softens out the nose and adds complexity. The palate is rich and flavour some. The addition of the lees gives this gin a lovely softness and length producing a gin with exceptional balance and interest.
